Freezing, mixing and whipping of ice cream mix and air to produce ice cream. Scraped-surface freezing of other products. Highlights: – Robust design – Uniform product quality – 70-300 litres (18-80 US gallons) of ice cream per hour – Increased flexibility – Can handle a wider product range – Low product loss – User-friendly Working principle: The ice cream mix is supplied to the freezer direct or via a mix balancing tank placed on side of the freezer cabinet.
The ice cream mix is led to the mix pump which is fitted with an adjustable air intake valve, and pumps a mixture of mix and air into the freezing cylinder. During the passage through the freezing cylinder the air is whipped into the ice cream by a dasher.
Freezing of ice cream mix is carried out by means of liquid freon evaporating in the cooling jacket around the freezing cylinder. The stainless steel blades of the dasher scrape the frozen ice cream from the inside wall of the freezing cylinder and the pump pressure forwards the ice cream via the adjustable, constant pressure valve to a filling extrusion device.
